Randy Dunn handcrafted this 2001 Cabernet Sauvignon, the first wine release from the Palmaz family. The nuanced aromas of fresh pomegranate and dry oak leaves deepen with overtones of new leather. The medium-grain textured tannins help frame and focus the finish. Given how the harvest marked the revival of Henry Hagen’s winery and vineyard, Dunn and the Palmaz family aimed for a wine that offered balance and finesse in equal measure — a tribute to the past, and a signal of things to come. This wine pairs beautifully with lean game meats such as venison and elk, and would also complement earthy flavors such as wild mushrooms and roasted garlic.
